Millet is mildly sweet, nutty and a delicious accompaniment to peas and lentils. Tiny in size and round in shape, these ancient seeds are an interesting alternative to our more common grains but it is a staple food for a third of the world’s population.
Peas on the other hand used to be a staple food in the middle ages. By the 17th and 18th centuries, it had become popular to eat peas "green", that is, while they are immature and right after they are picked. This was especially true in France and England, where the eating of green peas was said to be "both a fashion and a madness"!
Finally Millet is a good source of vitamin B6, while peas and lentils not only add extra protein but are also a valuable source of iron.
